2*These documents must be given to each ONE of the committee memberS.
There's really NO different in meaning between these sentences, but please notice that the noun following "each of" or "each one of" must be plural (because the meaning is "one of many").
Also please mote that there is a third way to write the sentence, also no different in meaning,but followed by a singular noun:
3*These documents must be given to each committee member.
I think this last one is more efficient and more likely than #1 ot #2.
